Program Day 1 :
9.00 – 9.30 : Opening the course
9.30 – 12.00 Learn cooking theory and practice Osechi Ryori (Osechi food for the Japanese New Year).
12.00 -13.00 : Lunch break
13.00 – 17.00 : Practicing Osechi Ryori, a Japanese New Year food.
Program Day 2 :
9.00 – 12.00 The true Japanese food culture, Kaiseki food for winter (Kaiseki Cuisine – Winter Meal – Cooking demon, actual cooking lesson and taste testing)

- Suimono – Soup
- Yakimono – grilled dish
- Nimono – boiled or stewed dish
12.00 -13.00 : Lunch break
13.00 – 17.00 : Learn to cook in theory and practice (continued) Kaiseki Cuisine – Winter Meal – Cooking demon, actual cooking lesson and taste testing)
Program Day 3 :
9.00 – 12.00 Ikechime Ikechime, the cutting of live fish. (Extracting blood from live fish – seasonal fish such as hirame (single-eyed fish)
Techniques for making ikejime and cooking food from fish obtained from making ikejime This technique makes the fish not fishy. and maintains freshness for fresh eating better
12.00 -13.00 : Lunch break
13.00 – 17.00 : Cooking from fish obtained from making ikejime.

9.30 – 12.00 : Practical lesson – Sashimi from seafood other than fish such as taco, shellfish, etc.
Preparing raw materials and making sashimi from Japanese shellfish or various types of seafood other than fish.
12.00 -13.00 : Lunch break
13.00 – 16.00 : Learn the principles, theory and practice of the Aged Welfare Cooking Course. Food for the elderly. (There may be changes) which Thailand is entering into an aging society. We want to learn concepts. and methods from Japan, which has had more experience in the aging society than Thailand.

Program Day 5 : Anyone who is interested can travel together with The V School to the fresh fish market :
